







Iodine
Iodine is an essential component of the two thyroid gland hormones
tri-iodine-thyroxin and tetra-iodine-thyroxin. Both hormones control
cell growth and many metabolic processes and regulate the body weight
and the activity level of a person. A foetus needs an adequate supply
of iodine for normal physical and mental development. When the supply
of iodine to the body is insufficient, the thyroid gland grows into an
iodine-deficiency struma, also known as goitre.
Iodine deficiency often has geographical causes, i.e. when the iodine salts in the soil have been leeched out. Iodine salts are highly soluble in water, and the weathering of iodine-containing rock moves the iodine on a natural pathway to the largest iodine store on earth: the oceans.
The uptake of iodine can be inhibited by certain foods such as cabbage, linseed, peanuts and sunflower seeds as well as by water with a high nitrate content, special medication (e.g. lithium) or cigarette smoke.
The most important sources of iodine in nutrition are seafood such as fish, crustaceans and clams. Many algae, e.g. Nori, which is used in the preparation of sushi, also are very rich in iodine. Sea salt is a further natural iodine source. Sufficient iodine is furthermore provided by iodine-enriched table salt.
The minimum iodine requirement of humans is between approx. 60 and 120 μg/day, depending on the body weight. The German Society for Nutrition recommends a daily supply of 200 μg, which can be increased up to 250 μg during pregnancy and breast-feeding. Dosages of over 2000 μg per day may lead to hyperactivity of the thyroid gland.
